Chicken parmesan or chicken parmigiana is a dish that consists of breaded chicken breast covered in tomato sauce and mozzarella, Parmesan or provolone. Ham or bacon is sometimes added.

Ingredients

  • 2 chicken breasts, halved into cutlets
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs

  • 1 cup marinara sauce
  • 6 oz mozzarella, sliced
  • Olive oil, for shallow frying
  • Kosher salt and black pepper, to taste

Method

  1. Pound chicken cutlets to even thickness and season both sides well.
  2. Bread each cutlet in flour, egg, and crumbs, pressing so coating adheres.
  3. Pan-fry in shallow oil over medium until deeply golden on both sides.
  4. Arrange in a baking dish, top with sauce, mozzarella, and Parmesan.
  5. Bake at 425F until cheese is melted and chicken reaches 165F.
