A grilled cheese, toasted cheese sandwich, cheese toastie (UK) or cheese jaffle (AU) is a hot cheese sandwich typically prepared by placing cheese between slices of bread and cooking with butter or mayonnaise on a frying pan, griddle, or sandwich toaster, until the bread browns and the cheese melts. Despite its name, it is rarely prepared through grilling.

Moderate pan heat synchronizes bread browning with cheese melt.

Simple sandwich, high payoff.

Ingredients

  • 4 slices sturdy sandwich bread
  • 4 oz sharp cheddar, shredded
  • 2 oz low-moisture mozzarella, shredded
  • 2 tbsp softened unsalted butter
  • Pinch kosher salt

Method

  1. Preheat a heavy skillet over medium-low so the cheese can melt before the bread burns.
  2. Butter the outside of each slice and build sandwiches with an even layer of cheese.
  3. Cook 3 to 4 minutes on the first side, pressing lightly, until deeply golden.
  4. Flip and cook the second side until equally browned and molten in the center.
  5. Let rest 1 minute, then slice and serve while hot.

Why These Techniques Work

Browse techniques

Low-to-medium pan toasting

Why it works: Steady heat prevents burnt bread before cheese softens.

Why this recipe uses it: Balanced texture needs crisp exterior and gooey center.

Layered salting and staged reduction

Why it works: Incremental seasoning and evaporation increase perceived depth without oversalting late.

Why this recipe uses it: Broth-forward dishes need flavor concentration before final texture adjustment.
