Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp sake or rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil (optional)

Method

  1. Whisk miso, mirin, soy, sugar, and sesame oil into a smooth glaze.
  2. Coat salmon and marinate 15 to 30 minutes while the broiler heats.
  3. Arrange salmon skin-side down on a lined sheet and broil 4 to 6 inches from heat.
  4. Cook until the glaze caramelizes and the fish flakes at the thickest point.
