Miso sugars caramelize quickly, creating savory glaze depth.
Quick fish with big umami flavor.
Ingredients
- 4 salmon fillets (about 6 oz each)
- 3 tbsp white miso paste
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp sake or rice vinegar
- 1 tbsp brown sugar
- 1 tsp sesame oil (optional)
Method
- Whisk miso, mirin, soy, sugar, and sesame oil into a smooth glaze.
- Coat salmon and marinate 15 to 30 minutes while the broiler heats.
- Arrange salmon skin-side down on a lined sheet and broil 4 to 6 inches from heat.
- Cook until the glaze caramelizes and the fish flakes at the thickest point.
- Serve immediately with rice and a crisp vegetable side.
