Banana bread is a type of sweet bread or cake made from mashed bananas. Banana bread is typically classified as a quick bread, relying on chemical leavening agents such as baking soda or baking powder rather than yeast, which allows it to be prepared without fermentation. It is often a moist and sweet quick bread but some recipes are yeast raised. Its sweet taste and slightly crumbly texture make it more akin to a tea cake or muffin than bread.

  5. Bake 50 to 65 minutes until a tester comes out with moist crumbs; cool fully before slicing.

Why These Techniques Work

Browse techniques

Using very ripe bananas

Why it works: Ripeness increases sugar and aroma precursors.

Why this recipe uses it: It intensifies flavor without extra sweetener.

Temperature control before and during bake

Why it works: Consistent dough and oven temperature regulates steam release, set rate, and browning kinetics.

Why this recipe uses it: This recipe depends on crisp structure and even doneness rather than uneven browning.
