Shepherd's pie, cottage pie, or in French cuisine hachis Parmentier, is a savoury dish of cooked minced meat topped with mashed potato and baked, formerly also called Sanders or Saunders. The meat used may be either previously cooked or freshly minced. The usual meats are beef or lamb. The terms shepherd's pie and cottage pie have been used interchangeably since they came into use in the late 18th and early 19th centuries, although some writers insist that a shepherd's pie should contain lamb or mutton, and a cottage pie, beef.

Ingredients
- 1 lb ground lamb
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 cup beef stock
- 2 cups mashed potatoes
- Kosher salt and black pepper, to taste
Method
- Brown lamb with onion and carrots until well caramelized and fragrant.
- Stir in tomato paste and stock and simmer until the filling is thick and spoonable.
- Transfer filling to a baking dish in an even layer.
- Spread mashed potatoes on top, sealing to the edge and roughing the surface.
- Bake at 400F until bubbling at the edges and deeply golden on top.
