Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, diced
  • 1 (14 oz) can diced tomatoes

  • 2 tsp Italian seasoning
  • Kosher salt and black pepper, to taste

Method

  1. Halve and seed peppers and roast cut-side down at 400F for 12 to 15 minutes to soften.
  2. Cook meat, onion, tomatoes, and seasonings until cohesive, then fold in cooked rice.
  3. Stuff peppers generously and arrange in a baking dish with a little sauce in the base.
  4. Top with extra sauce and cheese if using.
  5. Bake 20 to 30 minutes until peppers are tender and filling is hot through.
