Ingredients
- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, diced
- 1 (14 oz) can diced tomatoes

- Kosher salt and black pepper, to taste
Method
- Halve and seed peppers and roast cut-side down at 400F for 12 to 15 minutes to soften.
- Cook meat, onion, tomatoes, and seasonings until cohesive, then fold in cooked rice.
- Stuff peppers generously and arrange in a baking dish with a little sauce in the base.
- Top with extra sauce and cheese if using.
- Bake 20 to 30 minutes until peppers are tender and filling is hot through.
