Chili con carne, often shortened to chili, is a spicy stew of Mexican origin containing chili peppers, meat, tomatoes and often beans. Other seasonings may include garlic, onions, and cumin.

Ingredients
- 1 lb ground beef
- 1 tbsp neutral oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 (14 oz) can crushed tomatoes
- 1 (15 oz) can kidney beans, drained
- 1 cup beef stock
- Kosher salt and black pepper, to taste
Method
- Brown beef deeply in a Dutch oven over medium-high heat, working in batches if needed.
- Add onion and garlic and cook until softened, scraping the fond from the bottom.
- Stir in chili powder and spices and toast briefly to bloom.
- Add tomatoes, beans, and stock and simmer uncovered 35 to 45 minutes until thick.
- Taste, adjust seasoning, and let it rest 10 minutes before serving.
