Chili con carne, often shortened to chili, is a spicy stew of Mexican origin containing chili peppers, meat, tomatoes and often beans. Other seasonings may include garlic, onions, and cumin.

Ingredients

  • 1 lb ground beef
  • 1 tbsp neutral oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 (14 oz) can crushed tomatoes
  • 1 (15 oz) can kidney beans, drained
  • 1 cup beef stock
  • Kosher salt and black pepper, to taste

Method

  1. Brown beef deeply in a Dutch oven over medium-high heat, working in batches if needed.
  2. Add onion and garlic and cook until softened, scraping the fond from the bottom.
  3. Stir in chili powder and spices and toast briefly to bloom.
  4. Add tomatoes, beans, and stock and simmer uncovered 35 to 45 minutes until thick.
  5. Taste, adjust seasoning, and let it rest 10 minutes before serving.
