Scampi is a crustacean-based seafood dish, especially featuring langoustine, as well as shrimp or prawns, varying regionally in preparation. The term "scampi" is also used as a style of preparation.

Ingredients
- 12 oz linguine
- 1 lb large shrimp, peeled and deveined
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 tsp red pepper flakes
- 1/3 cup dry white wine
- 2 tbsp lemon juice
- 2 tbsp chopped parsley
- Kosher salt and black pepper, to taste
Method
- Cook linguine in salted water until just shy of al dente; reserve 1 cup pasta water.
- Warm butter and olive oil in a large skillet and cook garlic briefly until fragrant.
- Add shrimp in one layer and cook 1 to 2 minutes per side until just pink.
- Add wine and lemon, then a splash of pasta water to form a light glossy sauce.
- Toss in pasta and parsley and serve immediately.
