Ingredients

  • 1 large cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 8 corn tortillas
  • 1/2 cup Greek yogurt
  • 1 tbsp lime juice
  • Shredded cabbage and cilantro, for serving

Method

  1. Heat oven to 450F and line a sheet pan.
  2. Toss cauliflower with oil and spices and roast until well browned at the edges, 20 to 25 minutes.
  3. Whisk yogurt, lime juice, and salt into a quick crema.
  4. Warm tortillas until pliable and lightly charred.
