Ingredients
- 1 large cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 8 corn tortillas
- 1/2 cup Greek yogurt
- 1 tbsp lime juice
- Shredded cabbage and cilantro, for serving
Method
- Heat oven to 450F and line a sheet pan.
- Toss cauliflower with oil and spices and roast until well browned at the edges, 20 to 25 minutes.
- Whisk yogurt, lime juice, and salt into a quick crema.
- Warm tortillas until pliable and lightly charred.
- Assemble tacos with cauliflower, crema, and toppings and serve immediately.
