Guacamole, sometimes informally shortened to guac in the United States, is an avocado-based dip, spread, or salad first developed in Mexico. In addition to its use in modern Mexican cuisine, it has become part of international cuisine as a dip, condiment, and salad ingredient.

Acid and salt brighten avocado richness while preserving color.

Fresh and bright avocado dip.

Ingredients

  • 2 ripe Hass avocados
  • 2 tbsp fresh lime juice
  • 1/4 cup finely diced red onion
  • 2 tbsp chopped cilantro
  • 1/2 tsp kosher salt
  • 1 small jalapeno, minced (optional)

Method

  1. Mash avocados in a bowl, leaving some texture.
  2. Fold in onion, cilantro, and jalapeno if using.
  3. Add lime juice and salt and taste for balance.
  4. If holding briefly, press plastic wrap directly on the surface to limit browning.
  5. Serve immediately with chips or warm tortillas.

Why These Techniques Work

Browse techniques

Late acid addition

Why it works: Acid slows oxidation and sharpens flavor.

Why this recipe uses it: Guacamole benefits from brightness and fresher color.

Acid, salinity, and texture balancing

Why it works: In no-cook dishes, contrast between acidity, seasoning, and texture drives flavor intensity and perceived freshness.

Why this recipe uses it: This recipe relies on bright seasoning and contrast instead of heat-driven browning for depth.
